It will make your lobster mac and cheese not blending. The aged cheeses can separate when melted and you won't get a smooth and silky sauce. For cheddar cheese, you should use a regular mild, medium or sharp cheddar cheese and not a cheddar cheese that's extra sharp or aged. If you do not have both of these cheeses, you can use shredded cheddar cheese. Note: Here we use two types of cheese to make the perfect taste.
